The art of truffle picking...
 
The search and picking of truffles is referred to in French as "cavage". Cavage is most often conducted with the help of a dog: he detects mature truffles by sniffing the ground. The dog then searches for the truffle in order to get his reward.

Cavage may also be conducted with a pig, the animal being naturaly enclined to look for truffles in order to eat them.

A few passionate truffle specialists detect truffles in sunny weather by looking for a small fly. This fly looks for truffles in order to lay its eggs in them.

Truffles are to be found in the "burnt" area around the tree. This characteristic zone around the tree is recognisable due to absence of any vegetation.
