Tuber melanosporum vittadini is picked between September and March. Its outer membrane (peridium) is coarse grained and forms a dark brown prism shaped pattern, with some reddish areas. It is of roundish form, sometimes more irregular. Its flesh is black with shades of purple when it is mature. It has fine veins, neatly defined and ramified; they appear white when the truffle is sliced, and become slightly red upon contact with air. The smell is intense, agreable and characteristic. So is its flavour. |

Picking takes place between December and March. Its outer membrane, dack brown to black, is fragile and easily peals off.It is of roundish form, sometimes more irregular. Its flesh is dark grey when mature. Its veins are white, thick and more sparsely spread than that of Tuber melanosporum. The smell is pleasant and strong, musky. The flavour is pleasant. |

Picking takes place between May and October. Its outer membrane is dark, close to black, and is rougher than that of melanosporum. It is of spherical shape, rarely irregular. Its flesh is brown when mature; its many veins are white and thin. Its smell is pleasant, slightly reminiscent of that of roasted malt. The flavour is more common and slightly nuty. |
